"Pizzaioli by profession"
Claudio Alvicolo was born in 2019 as the natural evolution of a journey that had started many years earlier. The project carries the signature of Claudio Delli Poggi, a lifelong pizza-maker, who, together with his siblings Stefano and Stefania, previously owned the historic pizzeria Charlie, a landmark for entire generations.
Claudio′s professional growth is the result of continuous training, which started at the Scuola Italiana Pizzaioli in Caorle and continued over the years with updates and master classes. The turning point came in 2008 with his entry to the University of Pizza at Molino Quaglia, an experience that decisively shaped his vision of the product and the craft.
From then on, the research never stopped. Claudio participates every year in the "Pizza Up" symposium in Vighizzolo d′Este, where pizza makers from all over Italy discuss the present and future of contemporary pizza. In 2012, he was a signatory of the Manifesto of Contemporary Italian Pizza, a crucial step defining the values, techniques, and identity of a new pizza culture.
